A Symmetrical Blade, The Double-Edged Knife
Many knives are sharpened with a preference to one side with it being 9:1 / 8:2 / 7:3 that often bends at an angle.
HATOGIYA Nameless Blade is perfectly symmetrical with a balanced 5:5 edge.
The reason for this is to make the knife easier to use for both left or right handed people.
Many knives are sharpened with right handed people in mind, with the right side of the knife being sharper. This leaves only 10-20% of knives being sharpened on the left side.
But this means that if the manufacturer doesn’t sharpen the blade correctly, you will get a diagonal cut in the food instead of a straight cut.
This knife is symmetrically sharpened, with a gentle but slim edge. With this shape, it means that the knife slices cleanly and easily through the food, giving the user a satisfied feeling when cutting.
Even when cutting harder root vegetables, you don’t need to worry about chipping, and you can use the Hatogiya Nameless Blade for years to come.
Created using a core of high class stainless steel
The core of the Hatogiya Nameless Blade is made from a high class, highly efficient VG10 Stainless Steel produced by Takefu Special Steel.
This VG10 is well known in the knife and blade industry, as being extremely high class and is a popular type of steel. As well this, because it is stainless steel, it doesn’t rust easily.

After working as a chef for 10 year, I changed professions, and undertook the job of Sharpener of Blades and Metal Polisher, and I launched Hatogiya (Japanese Sharpening Store)
I specialise in bringing back knives back to life, helping their owners to use their beloved knives for longer. The Hatogiya Nameless Blade is made in Seki City, Gifu Prefecture. It is a well known swordsmith town, a holy site known for being the starting area for many legendary smiths. It is here that I have placed my faith in makers in the area to make the knife, and then I finish it with my own hands, bringing the blade and its edge to completion.
The process of finishing the edge of the blade is done one by one, by hand using whetstones.
It is commonplace for western blade manufacturers to do so using a file however I use high quality natural whetstones.
What sets the HATOGIYA method of sharpening apart from many others is that for each blade I sharpen, I look to sharpen on a micro scale one by one, to the point that you might not even be able to see with the naked eye.
As there are burrs still left on the knife, it isn’t as smooth to cut through, so using 60000 diamond grit razor strop, I bring the knife to completion removing the burrs, and creating a clean cutting edge.
As the blade has a mirror finish, it might be hard to see the damascus finish at certain angles.

After working as a chef for 10 Years, Masayuki Harada opened Hatogiya, a knife sharpening speciality store, that shows and teaches people to revive old knives and bring them back to normal usage. While running the shop, he found that everyone prefers a different level of sharpness. Masayuki Harada also gives professional advice on how to cut and slice with a kitchen knife to customers as well as preparing them with knowledge of different types of knives.
