The secret behind how the Hamon Pot makes things tastier is behind the way the lid is made and the wave like pattern it has. When heated, the water content found in the food, which holds nutritional properties and the umami taste, becomes a umami mist or what we like to call [Umamist], and circulates the pan. The vapour then sticks to the wave like pattern, and then the droplet when they form fall back on to the food, restoring the umami flavours to the cooked food, and putting a smile on your face when you dig in!
The "Umamist" vapour that collects on the wave like protrusions on the underside of the lid helps to fuel a food's tastiness! Because of this, the need for seasoning is reduced and in some cases removed all together!
When waterless cooking, it is possible to retain a lot more of the nutrients as well as the umami taste. This increases the actual nutritional value of the meal, as well as increasing the taste!
Between the lid and the pot, there is an extremely airtight seal, with it being measured to about 1/1000mm. This is means that it seals better than a waterseal. This allows for all the ingredients water vapour to be contained.

Rice in Japan is normally washed and then submerged in water for about 30 minutes. Just by doing this small step, the taste of the rice can change greatly. Then we put the rice over a fire, heat until boiling then let simmer for about 12-13 minutes, stop the flame, and then let the rice cook by steam for another 10 minutes!

Because of the specially designed wave like pattern on the lid, the protrusions are about 6.6mm thick with an indent of about 4.0mm. With a normal fry pan having a thickness of about 1.2mm-3.0mm, there is an obvious difference. You can reduce the amount of oil you use while you cook!
Make amazing tasting sauces in the large pan, while using the lid to grill your meat!
As the ridges of the lid are quite pronounced, you can use it to help drain fried foods, then clean up super easily!
The HAMON Pot is about half the weight as a pot of the same thickness made from normal iron. Aluminium is both light and easy to use. This helps to reduce any stress you might feel from having to use heavy pots and pans!
The inside of the HAMON Pot is coated with a ceramic, non-stick, odour repellent coating. With a super tough anti-wear property, it can be heated to 400 degrees. It is both durable and long lasting!

When it comes to creating at our factory, we manufacture using tried and tested traditional methods, creating them one by one, meaning that we only are able to make 50-60 products a day.

Our pans are created using trademark technology - Cast®. The HAMON Pot is created with a uniquely formed crystalline structure by casting it in a specially made mould and leaving it to naturally form and harden. This lets the outer layers have amazing heat conduction at the same time as being tough. It also means that the inside forms slowly when cast, and it lets it have the amazing properties of holding heat. With these two complimenting parts, it means that it is an amazing piece of equipment for all homes.
When compared to iron or stainless steel, the thermal conductivity of the aluminium is much better.
In just a short time, the entirety of the pot becomes warm uniformly. This also means that you can also use a lower flame to cook! What’s more you can also cook with the residual heat after stopping the flame of the hob!

The HAMON Pot (with Lid) is 305mm wide by 130mm high and has a diameter of 230mm. It can hold 2.6 litres. The lid is only usable with a gas hob when used as a grill. It is not possible to use with an IH hob.
We utilize the environmentally friendly metal "Aluminium Recycled Bullion". Recycled Aluminium bullion is an environmentally friendly metal that reduces CO2 emissions. In order to create aluminium from scratch, it takes a large amount of energy to just smelt the raw material. "Aluminium Recycled Bullion" can be used in the manufacturing of the pans saving about 97% of the energy used, helping us to cut the carbon emissions that would normally be used to smelt raw aluminium.
We also use recycled materials such as office furniture and building materials for items manufactured in-house. Pots and pans that are no longer needed are disassembled at the factory into recycled aluminium. Non-recyclable materials such as iron and stainless steel are widely used in the metal processing industry in Takaoka City.
In May 1930, Saburo Arai, the founder of Hokuriku Aluminium Co., Ltd., established Hokuriku Aluminium Appliances Mfg. Co., Ltd. using the technology of Takaoka’s Copperware makers. We started manufacturing daily necessities such as pots and kettles using cast aluminium, and after the post-war economic recovery and the expansion of aluminium demand due to the growth of the Japanese economy, we established a production line based on excellent metal processing technology in Takaoka. It has been about 90 years since the company was founded. Hokuriku Aluminium is working on the manufacturing of Made in Takaoka as one of the few comprehensive manufacturers of aluminium products in Japan that produces various products other than daily necessities.
Our roots for our Pots and Pans start in 1947, when the late Teruo Yoshioka, through trial and error, was able to create a pot that was able to cook without using water.
The pot was a revolutionary creation, being able to create meals that didn’t lose nutritional value or taste, or boil tasty rice like a traditional iron pot could, or even create things like bread, and sold extremely well!
Hokuriku Aluminium has, since its founding, looked to cultivate the use of aluminium for the creation of pots and pans, as well as improve the techniques used to create them. In 1945, with the consent of Mr. Yoshioka, we started to create Yoshioka Pots.
From there, with the idea in mind of creating a pot that allows for many various ways of creating tasty and healthy food, we have continued to create the pots, as well as evolving and changing with the times.

Hokuriku Aluminium is an aluminium product manufacturer that has been running for the past 90 years or so, with it having its origins in producing cooking utensils. Since 1930, they have been producing high-quality aluminium cooking utensils, building materials and furniture etc., in the famous metalworking town of Takaoka in Toyama Prefecture.
